- 1.5kg of chicken

- 1 cardamom
- 2 tablespoons white wine

- 3 anise
- ½ teaspoon pepper

- 4-5 lemongrass plants
- 1 teaspoon pink salt
- 1 teaspoon turmeric powder
Dipping sauce
- Coriander

- ½ teaspoon pepper
- 1 teaspoon salt
- 1 tablespoon kumquat juice
2. Processing way:
Step 1: Prepare ingredients
Peel and slice the dried onion, ginger, and lemongrass. Place chicken in a large bowl. Next, add 3-4 pieces of sliced ginger, 2-3 stalks of scallions, 2 tablespoons of white wine. Squeeze the scallions and ginger with your hands tightly to release the essential oil, then use the ginger and scallions to rub into the chicken skin. This is an effective way to remove odors on chicken. Rinse chicken under water then place in a bowl to drain.
Step 2: Boil the chicken
