1. Ingredients for preparing duck cooked with porridge:

Main material: 

  • 1.5kg duck meat
  • 800g taro
  • 40g purple onion
  • 30g garlic
  • 3 cloves of lemongrass
  • 50g ginger

Spices for marinating and cooking the duck in porridge:

  • 130g red bean curd (100g chao, 30g bean curd juice)
  • 2 spoons of sugar
  • 1 spoon of MSG
  • 1 teaspoon Korean chili powder
  • 2 fresh wet fruits (or satay)
  • 1 tablespoon cashew oil (or cashew powder)
  • 1 little cooking wine
  • 1 liter coconut water
  • 600ml water 

Accompanying ingredients: 

  • 500g vermicelli (can use dry or fresh vermicelli)
  • Water spinach, herbs, green onions.
  • Lemon, chili

2. How to cook duck in porridge

Step 1: Prepare ingredients 

Peel and chop the shallot and garlic. Peel and chop the ginger to wash the duck. Crush and cut the lemongrass into 5 - 6 cm long pieces.

Add 1 teaspoon of minced ginger bowl, add 1 teaspoon of salt, pour in a little white wine and mix well. Next, take the mixture you just made and rub it on the duck. Be sure to rub thoroughly both inside and outside the duck. 

Cut the duck into small pieces. If you have a packet of orange sauce, you can soak the duck in orange sauce for about 15 minutes. If you don't have it, you can soak the duck in 4 spoons of white wine mixed with 1 spoon of ginger and water. After soaking, wash the duck and cut it into small pieces.

Wash the vegetables and chop them into 5 - 6cm long pieces. You continue to clean and cut green onions into pieces to eat with. For the accompanying condiments, chop the chili and cut the lemon into pieces. 

Step 2: Marinate the duck meat 

Put in bowl 130g red bean curd (100g rice and 30g water), then stir well so that the rice and water dissolve evenly. Pour this mixture into chopped duck meat. Add 2 spoons of sugar, 1 spoon of monosodium glutamate, 1 spoon of Korean chili powder, 2 spoons of cashew powder to add color, 1 spoon of cooking wine, 1 spoon of purple onion, 1 spoon of garlic, 3 cloves of lemongrass and mix. even.

Marinate the duck meat for at least 60 minutes. If possible, 2 to 3 hours is best for the meat to absorb the spices.

For 800g of taro, wash then cut into small pieces. Put oil in the pan, then fry each piece of potato. When the outside of the potato is almost golden brown, turn off the stove. This step will help prevent the taro from disintegrating when put in the duck hot pot to cook.

Continue to add oil to the pan, add garlic, purple onion, 1 teaspoon minced onion and fry until fragrant. Then add the marinated duck meat. You should keep the heat on high until the duck meat is firm, then reduce the heat. Stir well for about 10 more minutes so the duck meat cooks evenly.

Step 3: Make duck broth to cook porridge

Put the duck meat processed in the above step into the soup pot. Add 1 liter of coconut water and 600ml of cold water, turn on high heat to boil the water and remove the foam. Continue to simmer the meat and broth for 30 minutes. After that, you can skim off the fat on the surface of the broth to make the broth smoother. 

Add 1 spoon of seasoning powder, 1 spoon of MSG and taste again to see if it suits your taste so you can continue to reduce it.

For the duck meat condiment, put 2 pieces of red bean curd and the bean curd water in a small bowl, add 2 teaspoons of sugar, 2 teaspoons of lemon juice and stir well.
