1. Raw materials: 

  • 1.2kg of beef
  • 800g with beef
  • 800g carrots
  • 120g onion
  • 1 liter coconut water 
  • 20g garlic
  • 20g ginger
  • 20g lemongrass
  • 3 halves
  • 10g cinnamon
  • 4 bay leaves
  • Seasoning: 1 teaspoon salt, 2 teaspoons sugar, 2 teaspoons seasoning powder, 1 teaspoon MSG, 2 teaspoons soy sauce, ½ teaspoon turmeric powder, 1 teaspoon curry powder, 1 teaspoon thyme powder (thyme), 1 teaspoon powder five spices, 1 teaspoon of pepper, 2 teaspoons of cinnamon apricot wine, 2 teaspoons of cashew color powder, ½ teaspoon of Korean chili powder. 
  • Accompaniments: Basil, coriander, lemon, chili. 

Note when choosing ingredients: 

Beef is the main ingredient for braised beef, so pay attention when choosing to buy this ingredient. You should choose beef or beef encrusted for processing, because beef has mixed tendons, so when cooked, it will be soft and crispy. In addition, you can choose beef tendons, shoulders, and breasts, these meat parts when stewed will not be dry and friable. Besides, you should choose carrots for dark yellow color to ensure freshness. Do not choose tubers with distorted shape, damaged outside.

2. Processing way:

Step 1: Prepare ingredients

Peel and mince the shallot, garlic, and ginger. Crush and cut into pieces of lemongrass 5-6 cm long. Peel the onion and cut it into small wedges.

Process materials

Put 200ml of boiling water, 1 teaspoon of salt, ginger, red onion, lemongrass into the pot. When the water has boiled, add 1.2kg of beef and 800g of beef encrusted to boil for 3 minutes, then remove to a plate. Cut the beef into squares, about 3.5 cm side. For beef patties, cut into smaller pieces to cook faster.

Step 2: Marinate the meat

Add the sliced ​​beef bowl big bowl. Add minced onion and garlic. Next, add 1 teaspoon of salt, 2 teaspoons of seasoning, 2 teaspoons of sugar, 1 teaspoon of MSG, 2 teaspoons of soy sauce, 1 teaspoon of pepper, 1 teaspoon of curry powder, ½ teaspoon of turmeric, ½ teaspoon of Korean chili powder, 2 tablespoons of thyme powder, 1.5 tablespoons of cooking wine, 2 tablespoons of cashew color powder and mix well.

When the spices have been mixed well with the meat, you proceed to marinate the meat for 1 hour at room temperature. If possible, marinate for about 2-3 hours to allow the meat to absorb more flavor.

Step 3: Make the sauce

Saute anise and cinnamon in a pan over low heat. Peel the carrots and shape each carrot into a flower shape. 

Marinate meat to make braised beef

Put the oil in the pan, then add the onion and garlic and fry until fragrant. Remove the marinated meat and add the meat to the pan and stir over high heat. Note that you should stir well so that the meat is evenly cooked within 5 minutes. 

Put the meat in a large pot to prepare the braised beef sauce. Next, add 1 liter of coconut water, 2 pieces of crushed ginger, lemongrass and cinnamon, roasted anise into the pot. Note that when the water boils, it is necessary to skim off the foam floating on the surface so that the broth is clearer. Turn on the stove on medium heat and cook for 30 minutes. Then, put 1 liter of water in the pot and continue cooking. 

Add 1 tablespoon of oil, garlic and onion to the pan. Next, add the carrots and mix well. After 2 minutes, add 1 teaspoon of seasoning and half a teaspoon of pepper, this step will help carrots more fragrant and rich when added to the broth.

After more than 1 hour of storage, remove all lemongrass and ginger separately. Add to the pot 300ml boiling water with 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1 teaspoon of salt and 1 teaspoon of MSG to make the broth more rich, to compensate for the water that has evaporated when cooking in the previous time. 

Keep the heat low and keep it for another 15 minutes, note that you should increase the seasoning as well as the time for the meat to be tender. Mix 2 tablespoons of cornstarch with 4 tablespoons of water and add to the pot of broth to create a light consistency.
