Xiu mai is a long-standing traditional dish of the Chinese people, and is also a favorite dish of many Vietnamese because of the rich, sweet and sour taste of tomato sauce and the softness of each piece of meat.

1. Sausage ingredients:

  • 400g minced pork 
  • 150g raw ham
  • 200g shrimp
  • 150g bean sprouts
  • 100g purple onion
  • 3 green onions
  • 50g cilantro
  • 20g garlic
  • 120g tomato sauce 
  • 600ml bone broth
  • Seasoning: ½ teaspoon salt, ½ teaspoon seasoning powder, ½ teaspoon pepper, ½ teaspoon garlic powder, ½ teaspoon cornstarch, 1 teaspoon oyster sauce, 1 teaspoon MSG, 1 teaspoon sugar, 1 teaspoon tapioca, 1 teaspoon seasoning , 1 teaspoon of salt, 1 teaspoon of MSG, 2 teaspoons of sesame oil, 40g of rock sugar.

How to choose fresh ingredients:

The shumai dish will be delicious dishes every day for the whole family when meatballs and ketchup are prepared with the highest quality and guarantee. 

With the ground pork, you should buy it at department stores or supermarkets, large butcher shops to ensure freshness and safety for health. At the same time, you should choose the meat that is bright red, not pale, with a little fat to prevent the dish from drying out when cooking. However, if you do not like to eat fat, you can choose completely lean meat. 

For tomato raw materials, you should choose bright red fruits with green stems, avoid choosing fruits that are crushed or watery. This way, the food will taste more delicious and beautiful

2. How to make tomato sauce sauce: 

Step 1: Prepare ingredients 

Wash the purple onion then cut it into small dices, if you don't have the purple onion, you can replace it with an onion then chop similarly. 

With scallions, you wash and then cut them into diced like purple onions. 

Switch to cilantro, cut off the roots, wash each stalk and finely chop it. Peeled scallions and minced garlic.

Next, you peel the beans, then cut them into pieces. After you have minced and put the beans in a bowl, add 1 teaspoon of salt and mix well by hand. At this stage, if possible, you should put the freshly made beans into a cloth bag and squeeze out the water. 

The 200g shrimp part, after being peeled and washed, patted dry with water.

Step 2: Marinate and process pork shank

Add 400g of ground pork, 200g of minced shrimp and 150g of raw pork bowl. Raw spring rolls will be the ingredients to help make delicious dishes every day – shumai is softer and more flexible. However, if you don't have this ingredient, you can replace it with calamari. 

Next, you put in the meat inside bowl ½ tsp salt, 1 tsp oyster sauce, ½ tsp seasoning powder, 1 tsp MSG, 1 tsp sugar, ½ tsp pepper, ½ tsp garlic powder, 1 tsp sesame oil, 60g chopped red onion, green onion, cilantro rye, 1 tablespoon cornstarch. Then mix well so that the meat and seasonings infuse together.

Finally, you add the beans to the prepared mixture and stir well. Put on paper gloves, soak a little oil in your hands and roll each piece of meat to the size you want to eat.

After you have completed the rounding of the shumai, place each piece of meat in the steaming workshop lined with parchment paper. You turn on the medium heat and steam for 10 minutes.

Step 3: Make tomato sauce

The tomato sauce in the shumai dish is the most attractive part of the ketchup shumai – this everyday delicacy. To make this sauce, first, you add 120g of tomato sauce, ½ teaspoon of seasoning powder, 1 teaspoon of MSG, 1 teaspoon of salt, 40g of rock sugar.

Add oil to the pan, then add minced onion and garlic. When the onions and garlic are golden and fragrant, add the prepared sauce mixture to the pan, stirring frequently so that the sugar is dissolved. 

Then, you add 400ml bone broth to the pan to sweeten the sauce, you can replace it with chicken broth according to your preference. The sauce will become thicker when you add 1 tablespoon of cornstarch mixed with 2 tablespoons of water in a ratio of 1:2. In addition, you can add chili powder to the sauce to create a beautiful orange-yellow color for the dish. 

Step 4: Finished product 

After you have finished making the sauce, take out the meat that has been steamed in the factory, slowly put each piece into the pan to stir with the tomato sauce. The hot sauce, rich in sweet and sour taste, and the soft meatballs will blend together. 

After about 2 to 3 minutes, take out the dish dish, pour sauce on top, garnish with herbs and enjoy with family.
