1. Ingredient: 

  • 1 chicken (about 1.5kg - 1.8kg)
  • 6 lemongrass bulbs 
  • 1 purple onion
  • 2 chili peppers
  • 400g salt
  • Lettuce leaves
  • Lemon leaves
  • 1 onion
  • 1 teaspoon seasoning
  • 2 spoons of sugar
  • 1 teaspoon salt
  • 1 tablespoon fish sauce

2. How to cook steamed chicken with lemon salt:

Step 1: Prepare ingredients

Wash chicken with clean water and salt. Chop the purple onion. Finely chop lemon leaves to make ingredients for dipping sauce. Chop chili, one to marinate chicken, one to make dipping sauce. Chop the onion into small pieces about 2cm thick, this will be the ingredient to put on the bottom of the pot while the chicken is incubating and help the chicken not become salty when steaming with salt. Crush the lemongrass and cut it into small pieces about 5-6cm to easily put in the chicken steamer.

Step 2: Marinate the chicken

Put in a bowl 1 spoon of salt, 2 spoons of sugar, 1 spoon of seasoning powder, 1 spoon of turmeric powder, 1.5 spoons of pepper, chopped purple onion and chili (if you don't like spicy food, you can skip the chili process). This). Then pound all the above ingredients, let the purple onions and chili soak in the spices. Next, add 1 tablespoon of cooking oil to the pounded mixture, mix well so the oil is infused with the spices. 

Put the chicken in one big bowl large and pour the prepared marinade over. Then proceed to spread the sauce evenly over the parts of the chicken. Note that you should marinate both the inside and the outside to allow the chicken to absorb the spices. Marinate chicken for 30 minutes.

Put the pot on the stove and let it set on medium heat, do not let the heat be too high to burn the pot and let the chicken cook evenly. Incubate the chicken for 50 to 60 minutes.

Put 1 teaspoon of pink salt, 1 teaspoon of sugar, 1.5 teaspoons of lemon juice, 1 teaspoon of pepper in a bowl and mix well. Then add the chopped lime leaves and chili. Lemon leaves and chili will be the ingredients to help the sauce add scent and flavor, which is very suitable for steamed chicken with lemon salt.

Step 5: Finished product 

After about 50 – 60 minutes, remove the chicken from the pot and put it in dish. 1. Raw materials:

  • 600g chicken wings
  • 20g purple onion
  • 30g garlic
  • 60g ginger
  • 1 tablespoon chicken seasoning
  • 2 spoons of sugar
  • ⅓ teaspoon of MSG
  • 2 tablespoons fish sauce mixed with sauce
  • 2 tablespoons chicken seasoning 
  • 1 teaspoon chili powder
  • ½ teaspoon pepper
  • 1.5 tablespoons deep-fried flour
  • ½ teaspoon chili sauce
  • 2 tablespoons cooking oil

2. Processing way: 

Step 1: Prepare ingredients 

Chop 2 purple onions, 1 garlic, 15g ginger. Note the remaining ginger is chopped to use for the stage of boiling chicken wings. Put the minced shallot, garlic and ginger in a filter bag, then squeeze out the water into a small bowl.

Put 200ml of water in the pot. Next, add ½ teaspoon of salt, crushed ginger and chicken wings to the pot. Cook the chicken for 2 to 3 minutes. Remove chicken wings and drain. 

Step 2: Marinate and fry chicken 

Put 600g of chicken wings in a bowl. Pour 1 tablespoon of prepared onion, garlic, and ginger juice over the chicken. Next, add 1 teaspoon of seasoning, ⅓ teaspoon of pepper, 2 tablespoons of fish sauce, ½ teaspoon of cooking oil, 1 teaspoon of chili powder and mix well. 

Pour oil into the pan, then pour in the pre-boiled chicken wings. Note that the chicken wings are turned over so that the meat is cooked evenly and the skin on both sides is uniform. After a few minutes, remove the chicken and drain the oil.

Step 3: Prepare the sauce

Put in a small bowl 2 tablespoons of sugar, 2 tablespoons of fish sauce, ½ teaspoon of MSG, ⅓ teaspoon of pepper, half a teaspoon of chili sauce, 1 teaspoon of filtered water and mix well. 

Step 4: Finished product

Put the pan on the stove and put in 2 tablespoons of cooking oil, add the remaining amount of garlic and fry on low heat. When the garlic is golden, add the prepared sauce to the pan. 

When the mixture has boiled evenly, add the chicken wings to the pan and stir well to let the chicken infuse the spices. After a few minutes, turn off the heat and arrange the chicken with the sauce plate. Can be eaten with raw vegetables, white rice or sticky rice are very delicious.
