Vegetarian ribs are one of the favorite delicious vegetarian dishes. This vegetarian dish is made with ingredients mainly from vegetarian ribs, sugarcane, lemongrass and spices, then cleverly shaped to make both bones and meat. Each piece of vegetarian rib is blended with a strong salty-sweet sauce with a beautiful golden color, bringing an interesting and strange feeling when enjoying. 

1. Ingredients for making sweet and savory vegetarian ribs:

  • 200g Vegetarian Pork Ribs 
  • 5-6 pieces of sugarcane (about 6cm in length) or 3-4 stalks of lemongrass 
  • 30g garlic or onion
  • 4 chili peppers 
  • Spices: ½ teaspoon of garlic powder, ½ teaspoon of chili powder, 1 teaspoon of vegetarian seasoning powder, 1 teaspoon of vegetarian fish sauce, 1 teaspoon of chili sauce, 4 tablespoons of deep-fried flour.

Note when choosing ingredients: 

For veggie short ribs, you can choose to buy bags (packages) at stores. There are various types of these products on the market today. For those of you who are vegan, instead of garlic, you can choose to substitute with shallots. If you don't have sugar cane ingredients, choose lemongrass instead, the flavor will still be guaranteed, without losing the taste of a delicious vegetarian dish. 

2. How to make sweet and salty pork ribs:

Step 1: Prepare ingredients

Before processing, soak the young vegetarian ribs in water for 1 hour for 1 hour big bowl. After the tenderloin is tender, squeeze it gently with your hand to drain the water and wash it twice with water to clean the ribs. Note when squeezing, you should squeeze horizontally so that the ribs do not tear. 

When the ribs are drained, cut the ribs into bite-sized pieces, a large piece can be divided into 3 to 4 small pieces. 

Chop the chili into small chunks and mince each piece of garlic. For those of you who are vegan, you can use onion rings. Cut the prepared sugarcane segments into small squares to make them look like pork ribs. 

Step 2: Marinate young ribs

The marinating step is one of the important steps. First, put the ribs in a bowl, then add 1 teaspoon of vegetarian seasoning powder, half a teaspoon of garlic powder, half a teaspoon of chili powder and mix well. If you don't have chili powder, you can substitute it with cashew powder, or you can skip these two spices if you don't have it at home.

Step 3: Shape the ribs

Bevel one end of the small cane bars that were cut initially. Then you skewer each of these cane sticks through the ribs that have just been marinated with spices. You should skewer along the ribs so that the dish is shaped in the most authentic and natural way. This is also the secret to creating delicious vegetarian dishes like savory dishes.

Step 4: Fry the ribs

You slowly sprinkle 4 tablespoons of fried flour on the ribs, then lightly shake the whole bowl of ribs up so that the batter is evenly absorbed. The ribs are moist and tender, so the batter absorbs quickly. In the process of making, it is inevitable that the ribs will fall apart, please slowly straighten them with the crispy batter to ensure the next frying stage.

Fry the ribs on medium heat

Pour oil into a pan over medium heat and wait until the oil is hot enough to put each piece of ribs in and fry on medium heat. When the ribs are cooked on the underside, turn the ribs over so that the ribs are cooked evenly. Fry until the ribs are golden and evenly cooked on both sides, then remove the ribs plate, you can leave the tissue underneath so that the ribs are drained of oil. 

Step 5: Make the sauce

Put a tablespoon of cooking oil in a pan, then add minced garlic or shallots and sauté. When the garlic gradually turns yellow, add the chopped chili to the pan and stir well. Next, add a spoonful of vegetarian fish sauce, a spoon of sugar and a spoon of chili sauce to mix the garlic and chili in the pan, add 3 tablespoons of water and stir well. 

Step 6: Finished Product 

The spices will create a rich, attractive orange-yellow sauce. When the mixture comes to a simmer, season and adjust to taste. Then you put the fried ribs into the pan and stir to mix the sauce into the ribs. Place the ribs on a plate and pour over the sauce. So you have completed the vegetarian pork chops in the vegetarian family menu.
