The typical Southern dishes that are most often mentioned are broken rice with ribs, crab soup or vermicelli with seasoning, and especially not to mention Nam Vang noodle soup. Few people know that Nam Vang noodle soup originated from Cambodia, then imported to Vietnam and was modified to suit the taste of local people. 

Many years ago, Nam Vang noodle soup - a delicious Southern dish, consisted of only two main ingredients including soft and chewy noodles made from rice flour, combined with clear broth. Up to now, people often enjoy this dish with diverse ingredients such as fresh shrimp, quail eggs, pieces of pork liver and kidney, thinly sliced ​​pork and green onions. 

The combination seems strange but impossibly suitable, making many diners miss this typical Southern dish every time they visit. You can absolutely try your hand at making this Southern delicacy at home and treat the whole family.

1. Ingredients for making Nam Vang noodle soup:

Broth part:

  • 1.5kg pork bones
  • 60g dried shrimp
  • 40g dried squid
  • 500g white radish
  • 100g purple onion
  • 50g ginger 

Side ingredients:

  • 600g dried noodles 
  • 500g lean shoulder meat
  • 300g pork kidney 
  • 400g pork liver
  • 500g fresh shrimp
  • 250g pork fat
  • From 10 to 20 quail eggs 
  • 120g garlic

Accompanying vegetables: 

  • 200g cauliflower 
  • 100g of ship smell
  • 200g lettuce
  • 150g price 
  • Green onions, chives, chili, lemon

The seasoning for the broth: Seasoning, salt, sugar, monosodium glutamate.

2. How to make Nam Vang noodle soup:

Step 1: Prepare meat ingredients:

The broth of Nam Vang noodle soup has a sweet taste from stewing pork bones. For the 1.5kg pork bone, you should wash it, you can soak it in salt water for about 30 minutes, then continue to change the water, you should soak for 1 hour 30 minutes.

With the pork kidney, you wash it, then cut it in half, discarding the white part inside. Similar to the liver, you also wash and cut into small pieces. Then you put these parts in a bowl full of water, add a teaspoon of salt and squeeze to remove the bad smell from the liver and kidneys. Then you put the liver in a bowl of fresh milk, the kidney part in a bowl of ice water. This will make the ingredients softer.

You add water and fresh ginger to the pot, then add the cleaned pork bones. Wait for the water to boil for about 3 minutes, then remove the bones and discard the dirty water. You should also note that you should wash this bone again to make the broth clearer.

For 500g of pork, you cut into small pieces to eat. The dried part of the squid, you put it on a plate, then cover it with food film and put it in the microwave for 30 seconds.

Add 500g of ground pork big bowl, marinate with a little green onion and minced shallot, 1 teaspoon seasoning, 1 teaspoon sugar, ½ teaspoon pepper, 1 teaspoon fish sauce and mix well. 

Put water in a pot and boil 500g of lean pork with a little ginger and red onion so that the meat no longer smells. You also boil liver, kidney and shrimp similarly. When these ingredients are cooked, proceed to cut them into small pieces. Alternatively, you boil quail eggs for 15 minutes. Although the preparation part is sophisticated, it will create an extremely impressive southern delicacy. 

Step 2: Prepare vegetable ingredients

Wrap the shallot and ginger in foil, then place in the oven for 10 minutes. Next, peel the skin and cut it into pieces. The dried shrimp part has been washed, put in the pan and stir well, when the aroma is fragrant, turn off the stove. 

With scallions, chop the top of the onion and leave the stalk underneath. Peel the garlic and mince the garlic. The chives and celery, you wash and cut into small pieces from 5 to 6cm. Peel the white radish and cut it into circles.

Step 3: Make a typical Southern wine noodle soup

Put the bones in the pot, then add 4 liters of water, add 10g of rock sugar. When the water boils, skim off the foam and lower the heat to low, let the water boil gently for 40 minutes. Put the dried squid and dried shrimp in the pot of broth. 

Then, you put the pan on the stove with 4 tablespoons of cooking oil, add the garlic to fry. When the garlic is fragrant and turns yellow, put the garlic in a small bowl. Next, put 250g of pork fat on the island to stir the fat, then take it out and drain the oil.

Continue to add oil to the pan, add the diced red onion, then add the ground pork, you can add a little white water to make the meat have a nice color and not dry. When the meat is cooked, proceed to pour it into a small bowl. When the broth has simmered for nearly 2 hours, put the ginger, red onion, and radish in the pot.

While making the broth, soak the noodles in white water for 10 minutes, then put them in boiling water and boil for 3 minutes. 

You take out the pork bones that have been cooked in the pot into a separate bowl, put the meat broth into the pot after filtering through the rails. Put in a bowl 30g rock sugar, 2 spoons of seasoning, 1 spoon of salt, 1 spoon of sugar, 1 spoon of MSG, stir well and put into the broth.

Step 4: Finished product:

Put noodles in bowl, then add the ingredients in turn to the bowl such as shrimp, sliced ​​pork, quail eggs, liver, kidney, chives, green onions, minced meat, fried fat. Fill the bowl with hot broth and use spoon add sauteed garlic. The fried garlic is the ingredient that makes this dish unique.
